Ingredients

For the Filling

4 large flour tortillas

1 cup crumbled feta cheese

½ cup cream cheese or Greek yogurt

½ cup cucumber, finely diced

¼ cup roasted red peppers, chopped

2 tbsp fresh parsley or dill, chopped

1 tbsp olive oil

½ tsp black pepper

Instructions

1. Prepare the Filling

In a bowl combine:

crumbled feta

cream cheese or Greek yogurt

diced cucumber

chopped roasted red peppers

parsley or dill

olive oil

black pepper

Mix until the filling becomes creamy and well combined.

2. Spread the Filling

Lay the tortillas flat on a clean surface.

Spread an even layer of the feta mixture over each tortilla, leaving about 1 cm space around the edges.

3. Roll the Tortillas

Roll each tortilla tightly into a log shape.

4. Chill 

Wrap the rolls in plastic wrap and refrigerate for 20 minutes to make slicing easier.

5. Slice into Pinwheels

Using a sharp knife, cut each roll into 1–2 cm thick slices.

6. Serve

Arrange the tortilla pinwheels on a platter and garnish with extra herbs if desired.
