1 large avocado

8 medium tortillas

Instructions
1. Preheat Oven
Preheat oven to 190°C (375°F) and lightly grease a baking dish.
2. Prepare the Filling
In a bowl combine:
shredded chicken
diced avocado
shredded cheese
sour cream or yogurt
cilantro
garlic powder
cumin
salt and pepper
Mix until well combined.
3. Make the Avocado Sauce
Blend together:
avocado
Greek yogurt or sour cream
milk
lime juice
garlic
cilantro
salt and pepper
Blend until smooth and creamy.
4. Assemble the Enchiladas
Spread 2–3 tablespoons of avocado sauce on the bottom of the baking dish.
Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
