Easy & Healthy Chicken Sweet Potato Bowl

The best chicken breast, naturally sweet roasted sweet potatoes, and crisp vegetables with a light dressing or yogurt sauce. The flavors are slightly savory, a little sweet, and very satisfying while staying healthy and easy to prepare.

Ingredients 

For the Chicken

2 boneless chicken breasts

1 tbsp olive oiL

1 tsp paprika

½ tsp garlic powder

½ tsp ground cumin

½ tsp salt

½ tsp black pepper

For the Sweet Potatoes

2 medium sweet potatoes, peeled and diced

1 tbsp olive oil

½ tsp paprika

½ tsp salt

¼ tsp black pepper

Bowl Toppings

1 cup fresh spinach or lettuce

½ avocado, sliced

½ cup cherry tomatoes, halved

¼ cup red onion, sliced

1 tbsp pumpkin seeds or sunflower seeds (optional)

Simple Yogurt Dressing

¼ cup Greek yogurt

1 tsp lemon juice

½ tsp honey

pinch salt and pepper

Instructions

1. Roast the Sweet Potatoes

Preheat oven to 200°C / 400°F.

In a bowl mix:

diced sweet potatoes

olive oil

paprika

salt and pepper

Spread on a baking tray and roast for 20–25 minutes until tender and slightly crispy.

2. Cook the Chicken

Season chicken breasts with:

paprika

garlic powder

cumin

salt and pepper

Heat olive oil in a pan over medium heat.

Cook chicken 5–6 minutes per side until fully cooked. Let it rest for 3 minutes, then slice.

3. Make the Yogurt Dressing

In a small bowl mix:

Greek yogurt

lemon juice

honey

salt and pepper

Stir until smooth.

4. Assemble the Bowl

Divide ingredients into bowls:

1. Add spinach or lettuce as the base

2. Add roasted sweet potatoes

3. Place sliced chicken on top

4. Add avocado, tomatoes, and onion

5. Drizzle with yogurt dressing
