½ cup cherry tomatoes (halved)

¼ cup red onion (thinly sliced)

¼ cup walnuts or pecans (toasted)

2 tbsp dried cranberries (optional)

For the Dressing:

3 tbsp olive oil

1 tbsp balsamic vinegar

1 tsp Dijon mustard

1 tsp honey

Salt & pepper (to taste)

Instructions

1. Prepare the Goat Cheese

Slice goat cheese into 1-inch thick rounds.

Place in freezer for 10–15 minutes (helps them hold shape).

2. Coat the Cheese

Set up 3 bowls: flour, beaten egg, and breadcrumbs.

Coat each slice: flour → egg → breadcrumbs.

For extra crunch, repeat egg and breadcrumb coating.

3. Cook the Cheese

Heat olive oil in a pan over medium heat.

Fry each round for 1–2 minutes per side until golden brown.

Remove and place on paper towels.

4. Make the Dressing

Whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper.

5. Assemble the Salad

Toss greens, tomatoes, onion, nuts, and cranberries with dressing.
