 Ingredients

 Pastalaya

300g penne or rotini pasta

2 tbsp olive oil

1 chicken breast (cubed)

200g smoked sausage (sliced)

1 small onion (chopped)

1 bell pepper (chopped)

2 cloves garlic (minced)

2 cups chicken broth

1 cup crushed tomatoes

1 tsp paprika

1 tsp Cajun seasoning

½ tsp thyme

Salt & black pepper

Fresh parsley (for garnish)

Peach Bourbon Wings

500g chicken wings

Salt & pepper

1 tbsp oil

Peach Bourbon Sauce:

1 cup peach preserves

2 tbsp bourbon (optional but recommended)

1 tbsp soy sauce

1 tbsp apple cider vinegar

1 tsp garlic (minced)

½ tsp chili flakes

Green Beans

250g green beans (trimmed)

1 tbsp olive oil

2 cloves garlic (sliced)

Salt & pepper

Optional: squeeze of lemon

Instructions

1. Cook the Wings

Preheat oven to 200°C.

Toss wings with oil, salt, and pepper.

Bake 35–40 minutes until crispy (flip halfway).

Make Sauce:

Simmer peach preserves, bourbon, soy sauce, vinegar, garlic, and chili flakes for 5–7 minutes.

Toss hot wings in the glaze and return to oven for 5–10 minutes until sticky.

2.  Make Pastalaya

Cook pasta until just al dente; set aside.

Heat oil in a large pan.

Sauté sausage until browned, then add chicken.

Add onion, bell pepper, and garlic—cook until soft.

Stir in tomatoes, broth, and spices.

Simmer 10 minutes.

Add cooked pasta and toss until coated and slightly thickened.

3.  Green Beans

Heat butter/oil in a pan.

Add garlic and sauté briefly.

Toss in green beans; cook 5–7 minutes until tender-crisp.

Season and finish with lemon (optional).

Serving

Plate a generous scoop of pastalaya

Add glazed wings on the side

Finish with a portion of green beans

Garnish with parsley for freshness
