Beet Avocado Orange Salad
Ingredients
- 2–3 medium beets (cooked and sliced)
- 1 ripe avocado (sliced)
- 1–2 oranges (peeled and segmented)
- 2 tbsp fresh parsley or cilantro (chopped)
- 1–2 tbsp olive oil
- 1 tbsp lemon juice or orange juice
- ½ tsp black pepper
- Salt to taste
Instructions
1. Prepare the beets
- If raw: boil or roast beets until tender (about 30–40 minutes), then peel and slice
- If pre-cooked: just slice into rounds or wedges
2. Assemble the salad
- Arrange sliced beets on a plate
- Add avocado slices
- Place orange segments on top
- Sprinkle chopped herbs
3. Make the dressing
- In a small bowl, mix:
- Olive oil
- Lemon/orange juice
- Salt and pepper
- Drizzle over the salad
Optional Add-ons
- Feta cheese or goat cheese 🧀
- Nuts (walnuts or almonds) 🌰
- A pinch of chili flakes for heat 🌶️
Tips
- Use ripe but firm avocado so it holds shape
- Chill the beets before serving for extra freshness
- Balance flavors: sweet (orange), earthy (beet), creamy (avocado)
