Ingredients

 Crust

1 ½ cups graham cracker crumbs

½ cup finely ground pistachio

6 tbsp melted butter

2 tbsp sugar

Pinch of salt

Cheesecake Filling

24 oz (680 g) cream cheese, softened

¾ cup sugar

3 large eggs

1 cup sour cream

2 tsp vanilla extract

Zest of 1 lemon + juice of ½ lemon

Zest of 1 lime + juice of ½ lime

2 tbsp flour (optional, for stability)

Cherry Swirl

1 ½ cups cherries (fresh or frozen), pitted

3 tbsp sugar

1 tsp lemon juice

1 tsp cornstarch mixed with 1 tbsp water

Instructions

1. Prepare the Cherry Swirl 

Cook cherries, sugar, and lemon juice in a saucepan over medium heat.

Mash slightly as they soften.

Stir in cornstarch slurry and cook until thickened (3–5 minutes).

Cool completely.

2. Make the Pistachio Crust

Mix graham crumbs, ground pistachios, sugar, salt, and melted butter.

Press firmly into a 9-inch springform pan.

Bake at 175°C (350°F) for 8–10 minutes. Cool.

3. Prepare Cheesecake Filling

Beat cream cheese until smooth.

Add sugar and mix until fluffy.

Add eggs one at a time.

Mix in sour cream, vanilla, citrus zest, and juice.

Stir in flour (if using).

4. Assemble

Pour half the batter over crust.

Add spoonfuls of cherry swirl.

Pour remaining batter.

Add more cherry swirl on top and lightly swirl with a knife.

5. Bake

Bake at 160°C (325°F) for 60–70 minutes.

Center should be slightly jiggly.

Turn off oven, crack door, and cool for 1 hour.

6. Chill

Refrigerate at least 4–6 hours or overnight for best texture.
