Ingredients

For the Patties

1 cup cooked farro (cooled)

2 cups fresh spinach, chopped

½ cup feta cheese, crumbled

¼ cup grated  parmesan cheese

1 egg

¼ cup breadcrumbs (or oat flour for gluten-free)

2 cloves garlic, minced

2 tbsp red onion, finely chopped

1 tbsp fresh parsley or dill, chopped

1 tsp lemon zest

½ tsp salt

¼ tsp black pepper

For Cooking

2–3 tbsp olive oil

Optional Serving Sauce

½ cup Greek yogurt

1 tbsp lemon juice

1 tsp olive oil

½ tsp garlic powder

Instructions

1. Prepare the Mixture

1. In a large bowl, combine cooked farro, chopped spinach, feta, Parmesan, egg, breadcrumbs, garlic, onion, herbs, lemon zest, salt, and pepper.

2. Mix well until everything is evenly combined.

3. Scoop about 2 tablespoons of mixture and shape into small patties.

4. Place on a plate and repeat with remaining mixture.

5. Heat olive oil in a skillet over medium heat.

6. Add patties in a single layer (do not overcrowd).

7. Cook for 3–4 minutes per side until golden brown and crispy.

4. Make the Sauce (Optional)

8. In a small bowl, mix Greek yogurt, lemon juice, olive oil, and garlic powder.

5. Serve

9. Serve patties warm with the yogurt sauce or a side salad.

Tips for Best Results

Make sure the farro is cooled and not wet to prevent soggy patties.

If the mixture is too soft, add more breadcrumbs.

Press patties firmly so they hold together while cooking.

Cook on medium heat to get a crispy exterior without burning.
