 Ingredients

2 cups all-purpose flour

1 cup cottage cheese (room temperature)

2 tablespoons olive oil

½ cup warm milk

2 teaspoons instant yeast

1 teaspoon sugar

1 teaspoon salt

½ cup sun-dried tomatoes (chopped)

1 teaspoon dried oregano

½ teaspoon garlic powder

Optional: ¼ cup grated parmesan cheese

 Instructions

1. Activate the Yeast

In a bowl, mix warm milk, sugar, and yeast. Let sit for 5–10 minutes until foamy.

2. Mix Wet Ingredients

Add cottage cheese and olive oil to the yeast mixture. Stir until combined.

3. Form the Dough

Add flour, salt, oregano, and garlic powder. Mix until a soft dough forms.

4. Add Sun-Dried Tomatoes

Gently knead in the chopped sun-dried tomatoes (and parmesan if using).

5. Knead the Dough

Knead for 8–10 minutes until smooth and elastic.

6. First Rise

Place dough in a greased bowl, cover, and let rise for about 1 hour or until doubled.

7. Shape & Second Rise

Shape into a loaf or place in a loaf pan. Let rise again for 20–30 minutes.

8. Bake

Bake at 180°C (350°F) for 30–35 minutes until golden brown.

9. Cool & Serve

Let cool slightly before slicing. Serve warm or toasted.
