Mediterranean Zucchini, Broccoli & Corn Fritters

These fritters are savory, lightly crispy, and full of Mediterranean flavor with zucchini, broccoli, sweet corn, and fresh herbs. Perfect as a light lunch, snack, or side dish.

 Ingredients

1 medium zucchini, grated

1 cup broccoli florets, finely chopped or grated

½ cup corn kernels (fresh, frozen, or canned)

2 eggs, lightly beaten

¼ cup feta cheese, crumbled

¼ cup almond flour or whole wheat flour

2 cloves garlic, minced

2 tbsp fresh parsley, chopped

1 tsp dried oregano

Salt and black pepper, to taste

2–3 tbsp olive oil, for frying

Optional for serving:

Greek yogurt or tzatziki

 Instructions

1. Prepare vegetables:

Grate zucchini and squeeze out excess moisture using a clean towel.

Finely chop or grate broccoli.

2. Mix batter:

In a large bowl, combine zucchini, broccoli, corn, eggs, feta, flour, garlic, parsley, oregano, salt, and pepper. Mix until well combined.

3. Heat oil:

In a large skillet, heat 1–2 tbsp olive oil over medium heat.

4. Cook fritters:

Spoon 2–3 tbsp of batter per fritter into the skillet. Flatten slightly with the back of a spoon.

Cook 3–4 minutes per side, until golden brown and cooked through.

Repeat with remaining batter, adding more oil as needed.

5. Serve:

Serve warm with a dollop of Greek yogurt or tzatziki and a squeeze of lemon.

 Notes & Tips

Moisture control: Removing excess zucchini liquid prevents soggy fritters.

Baking option: Bake at 400°F (200°C) for 15–20 minutes, flipping halfway for a lighter version.

Protein boost: Add an extra egg or chickpea flour to increase protein content.

Flavor variations: Add chopped spinach, sun-dried tomatoes, or olives for a Mediterranean twist.

Meal prep: Fritters can be made ahead and reheated in a skillet or oven.
