Quick Mexican Street Corn Recipe

In honor of Hispanic Heritage Month, I’m going to share some of my best Hispanic-inspired foods with you. This is Mexican Street Corn. I could eat it every day because it makes me feel so good.

We’re going to make the corn soup today and then add some Crema Agria cheese to it. Because the cheese doesn’t melt, it’s very thick. The sauce and the thick Crema sauce taste their best when they’re put on warm corn.

Ingredients for Quick Mexican Street Corn

4 kernels of corn

a quarter cup of sour cream, preferably Crema Mexican Agria but any sour cream would do

1/2 tsp. of mustard

1/2 cup of shredded Cotija cheese

1/4 teaspoon of high-quality sea salt

One lime’s juice and rind

Cilantro chopped (about a quarter cup)

Chili powder, chipotle (1/2 teaspoon)

Instruction for  Mexican Street Corn

You can make this food in any way you like. When I make Mexican Street Corn, one of the most important things I think about is that it needs to be cooked right on the grill. I like to have the corn cut off from the husks so that I can get the best-roasted kernels. You can also leave them on to make it taste better.

A grill set to 400 degrees Fahrenheit can be used to cook the corn right on the fire. I chose to have the corn taken out of its husks so that I could get nice grill marks on it. Let the corn cool down in the water for about 10 minutes before you cook it. A little cooking spray can also be used to cover the seeds if you’d rather leave them there.

To make the Mexican Street Corn, put the corn on the grill and cook it for about 12 minutes until it’s soft. Put the corn, cheese, mayonnaise, and other ingredients in a bowl after it’s done cooking.

Be careful when you prepare the corn cobs. Spread the cheese mix on top of each one, and then add some cheese and parsley on top of that. Add a little chipotle pepper powder and parsley to make it taste better.

A Few Notes
You may prepare this recipe by roasting the ingredients at a temperature of 425 degrees. After you have sprayed the corn with cooking spray and cooked it on the grill, you can next cover it in aluminum foil and give it a light spray with more cooking spray. It should take around 20 minutes for the corn to become soft.
