Juicy Roasted Chicken with Potatoes Description This Juicy Roasted Chicken with Potatoes is a comforting, flavorful dish that combines a perfectly seasoned whole roasted chicken with crispy, golden-brown potatoes. The chicken is marinated with a blend of herbs, garlic, and butter, ensuring a juicy and tender bite with every slice. Roasting the chicken over potatoes allows them to absorb the rich, savory drippings, making them incredibly delicious. Ingredients For the Chicken: 1 whole chicken (4-5 lbs) 4 tbsp unsalted butter (softened) 3 tbsp olive oil 4 cloves garlic (minced) 2 tsp salt 1 tsp black pepper 1 tbsp fresh thyme (or 1 tsp dried) 1 tbsp fresh rosemary (or 1 tsp dried) 1 tbsp fresh parsley (chopped) 1 tsp paprika 1 tsp onion powder 1 lemon (halved) 1 small onion (quartered) For the Potatoes: 1.5 lbs baby potatoes (halved) 2 tbsp olive oil 1 tsp salt ½ tsp black pepper 1 tsp garlic powder 1 tsp paprika 1 tsp dried oregano Instructions Step 1: Prep the Chicken Preheat the oven to 425°F (220°C). Pat the chicken dry with paper towels to ensure a crispy skin. In a bowl, mix butter, olive oil, garlic, salt, pepper, thyme, rosemary, parsley, paprika, and onion powder to make a seasoning paste. Carefully loosen the skin of the chicken and spread some of the butter mixture under the skin for extra juiciness. Rub the remaining mixture all over the chicken, including inside the cavity. Stuff the cavity with the lemon halves and onion quarters for additional flavor. Step 2: Prep the Potatoes In a separate bowl, toss potatoes with olive oil, salt, pepper, garlic powder, paprika, and oregano until well coated. Spread the potatoes evenly in a roasting pan. Step 3: Roast the Chicken & Potatoes Place the chicken on a rack over the potatoes, breast-side up. If you don’t have a rack, place the chicken directly on top of the potatoes. Roast for 1 hour and 15 minutes, or until the internal temperature in the thickest part of the chicken (not touching bone) reads 165°F (75°C). Halfway through cooking, stir the potatoes to ensure even roasting. If the skin is browning too quickly, tent the chicken with foil. Step 4: Rest and Serve Remove the chicken from the oven and let it rest for 15 minutes before carving. Serve with the golden, flavorful potatoes.
