Total Time: 10 mins
Servings: 4 servings
INGREDIENTS:
2 bunches of asparagus
2 garlic cloves, minced
2 Tbsp olive oil
¼ tsp salt
¼ tsp black pepper
1 Tbsp fresh lemon juice
½ cup feta, crumbled
Lemon zest, optional
INSTRUCTIONS:
Prepare the asparagus. Snap the ends off your asparagus stalks and add them to a large bowl or tray. Then add 1 tablespoon of olive oil, your garlic, salt and pepper and toss until the asparagus are fully coated.
Preheat the grill. Turn your grill on to medium-high (or heat a grill pan on the stove over medium-high heat). While the grill heats, rub olive oil over your grates so the asparagus won’t stick.
Grill the asparagus. Once hot, place your asparagus on the grill perpendicular to the grates so they don’t fall through. Cook your asparagus for 3-5 minutes or until they’re just tender. (Do not flip your asparagus! We’re only cooking them on one side.) Once done, remove them from the grill and set them aside to cool slightly.
Prepare the “vinaigrette.” While the asparagus cools, whisk the lemon juice and remaining 1 tablespoon of olive oil together in a bowl and set it aside.
Toss & serve! Once the asparagus is cool enough to touch, cut it into 3rd’s and add it to a large bowl. Then add your crumbled feta and drizzle your vinaigrette over the top. Toss the aparagus until they’re fully coated then serve immediately with a sprinkle of lemon zest (if desired).
