Lemony Shrimp, Avocado & Tomato Salad

Ingredients:

1 lb cooked shrimp, peeled and deveined

1 large avocado, diced

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

2 tbsp fresh cilantro, chopped

2 tbsp olive oil

2 tbsp lemon juice

Salt and pepper, to taste

Instructions:

In a large bowl, combine shrimp, diced avocado, cherry tomatoes, red onion, and cilantro.

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

Pour the dressing over the shrimp mixture and gently toss to combine.

Serve immediately or chill for 10-15 minutes for flavors to meld.
