Grilled Chicken Salad with Eggs & Veggies
Ingredients:
1 chicken breast (grilled or pan-seared)
1 boiled egg (halved)
1 cup lettuce or mixed greens
Cherry tomatoes, halved
Sautéed mushrooms
Asparagus, lightly cooked
A few blueberries (optional)
Dressing: honey mustard or creamy vinaigrette
Instructions:
Grill the chicken until golden and cooked through, then slice.
Prepare the veggies: wash and slice lettuce, tomatoes, asparagus, and mushrooms
Boil the egg and cut in half.
Assemble the salad — layer greens, veggies, and chicken on a plate.
Drizzle with dressing and enjoy fresh!
