Instructions
1. Roast the Sweet Potatoes
1. Preheat oven to 220°C (425°F).
2. Toss sweet potato cubes with olive oil, salt, pepper, thyme, and paprika (if using).
3. Spread on a baking sheet in a single layer.
4. Bake for 20–25 minutes, tossing halfway, until golden and caramelized.
2. Prepare the Maple Dijon Chicken
1. Season chicken with salt, pepper, garlic powder, thyme, and rosemary.
2. Heat 1 tbsp olive oil in a pan over medium-high.
3. Sear chicken 4–5 minutes per side until lightly golden.

4. Cook Chicken in the Glaze
