Ingredients

Chicken

4 boneless, skinless chicken breasts

2 tbsp olive oil

1 tsp Italian seasoning

½ tsp salt

¼ tsp black pepper

1 clove garlic, grated

Caprese Topping

200 g fresh mozzarella, sliced

1½ cups cherry tomatoes, sliced

Fresh basil leaves

Balsamic Pesto

⅓ cup basil pesto

2 tbsp balsamic glaze

1 tbsp olive oil

Instructions

1. Prepare Chicken

Pound chicken lightly for even thickness.

Rub with olive oil, garlic, Italian seasoning, salt, and pepper.

Rest 10 minutes.

2. Grill Chicken

Heat grill or grill pan to medium-high.

Grill chicken 6–7 minutes per side, until cooked through.

During last minute, top each with mozzarella and cover to melt.

3. Make Balsamic Pesto

Stir pesto, balsamic glaze, and olive oil until smooth.

4. Assemble

Transfer chicken to plates.

Top with tomatoes and fresh basil.

Drizzle generously with balsamic pesto.

No grill? Pan-sear or oven-bake at 200°C (400°F) for 18–20 min.
