2 tbsp olive oil
Juice of 1 lemon
Zest of ½ lemon
2 garlic cloves, minced
1 tsp dried oregano

Vegetables
1 small zucchini, sliced
1 red bell pepper, sliced
1 cup cherry tomatoes
¼ red onion, thinly sliced
1 tbsp olive oil
