½ cup black or Kalamata olives, sliced

1 tsp dried oregano

½ tsp dried thyme

½ tsp paprika

Salt and black pepper to taste

¼ cup crumbled feta cheese

2 tbsp fresh parsley, chopped

Juice of ½ lemon

1. Heat the oil

Heat olive oil in a large skillet over medium heat.

2. Cook onion and garlic

Add chopped onion and cook for 2–3 minutes until soft. Stir in garlic and cook for another 30 seconds.

3. Brown the turkey

Add ground turkey. Break it apart with a spoon and cook for about 5–6 minutes until lightly browned.

4. Add vegetables

Stir in zucchini, bell pepper, and tomatoes. Cook 5–7 minutes until vegetables soften.

5. Season

Add oregano, thyme, paprika, salt, and black pepper. Mix well and cook for 2–3 minutes.

6. Finish the Mediterranean flavor

Stir in olives and lemon juice. Cook another 1 minute.

7. Garnish and serve

Sprinkle feta cheese and fresh parsley on top before serving.
