Healthy Tzatziki Chicken Salad Bowl

Ingredients
For the Chicken
2 chicken breasts (boneless, skinless)
1 tbsp olive oil
1 tsp dried oregano
½ tsp garlic powder
½ tsp paprika
Salt and black pepper to taste
Juice of ½ lemon
For the Salad
3 cups romaine lettuce or mixed greens
1 cucumber, sliced
1 cup cherry tomatoes, halved
¼ red onion, thinly sliced
¼ cup Kalamata olives
¼ cup crumbled feta cheese
For the Tzatziki Sauce
1 cup Greek yogurt
½ cucumber, grated and squeezed dry
1 clove garlic, minced
1 tbsp fresh dill (or ½ tsp dried)
1 tbsp lemon juice
1 tbsp olive oil
Salt to taste
Instructions
1. Cook the Chicken
1. Rub chicken with olive oil, oregano, garlic powder, paprika, salt, pepper, and lemon juice.
2. Heat a grill pan or skillet over medium heat.
3. Cook chicken 5–6 minutes per side until fully cooked.
4. Let it rest for 5 minutes, then slice.
2. Make the Tzatziki
1. In a bowl combine Greek yogurt, grated cucumber, garlic, dill, lemon juice, olive oil, and salt.
2. Mix well and refrigerate until ready to serve.
3. Assemble the Salad
1. In a large bowl add lettuce, cucumber, tomatoes, red onion, olives, and feta.
2. Place sliced chicken on top.
3. Add 2–3 tablespoons of tzatziki sauce over the salad.
