This Potato Chickpea Bowl is a hearty and nutritious meal made with roasted potatoes, protein-rich chickpeas, fresh vegetables, and a simple dressing. It’s perfect for vegan or vegetarian meals, meal prep lunches, or a healthy dinner.

Ingredients

Roasted Base

2 medium potatoes, diced

1 cup chickpeas, drained and rinsed

1 tbsp olive oil

½ tsp paprika

½ tsp garlic powder

½ tsp salt

¼ tsp black pepper

Vegetables

1 cup spinach or mixed greens

½ cucumber, diced

½ cup cherry tomatoes, halved

¼ red onion, sliced

Dressing

2 tbsp olive oil

1 tbsp lemon juice

½ tsp Dijon mustard

¼ tsp salt and pepper

Optional Toppings

¼ cup feta cheese

1 tbsp pumpkin seeds or sunflower seeds

Instructions

1️⃣ Roast Potatoes and Chickpeas

Preheat oven to 200°C (400°F).
Toss diced potatoes and chickpeas with olive oil, paprika, garlic powder, salt, and pepper.
Spread on a baking sheet and roast 20–25 minutes until golden.

2️⃣ Prepare the Vegetables

While roasting, chop cucumber, tomatoes, onion, and wash greens.

3️⃣ Make the Dressing

Whisk olive oil, lemon juice, Dijon mustard, salt, and pepper in a small bowl.

4️⃣ Assemble the Bowl

Add greens to a bowl, then top with roasted potatoes, chickpeas, and fresh vegetables.

5️⃣ Finish and Serve

Drizzle dressing over the bowl and sprinkle feta or seeds if desired.
