Potatoes

12 small baby potatoes

1½ tbsp olive oil

½ tsp salt

¼ tsp black pepper

Filling

¾ cup cream cheese, softened

½ cup shredded cheddar or mozzarella

⅓ cup dried cranberries, chopped

1 tbsp chopped chives or green onions

½ tsp garlic powder

¼ tsp black pepper

Instructions

1. Roast the Potatoes

Preheat oven to 200°C (400°F).

Toss potatoes with olive oil, salt, and pepper.

shredded cheese

chopped cranberries

chives

garlic powder

black pepper

Mix until creamy.

3. Hollow the Potatoes

Let roasted potatoes cool slightly.
Slice each potato in half and scoop out a small portion of the center to create space for filling.

4. Stuff the Potatoes

Fill each potato half with the cranberry cheese mixture.

5. Bake Again
