Vegan Sheet Pan Scored Potatoes
Description
Crispy on the outside, fluffy on the inside, these vegan sheet pan scored potatoes are inspired by accordion-style roasting. The scoring allows olive oil, garlic, and herbs to seep deep into every slice, creating layers of golden crisp edges. They’re simple, budget-friendly, and perfect as a side dish or even a main with dips.
Time
Prep time: 15 minutes
Cook time: 45–55 minutes
Total time: ~1 hour 10 minutes
Ingredients (Serves 4)
6 medium potatoes (Yukon Gold or russet work best)
4 tbsp olive oil (extra virgin preferred)
1 tsp sea salt (or to taste)
½ tsp black pepper
1 tsp smoked paprika
1 tsp garlic powder (or 3 fresh garlic cloves, minced)
1 tsp dried oregano (or thyme/rosemary)
Optional flavor boosts
2 tbsp fresh parsley, chopped
1 tbsp lemon juice or zest
Chili flakes (for heat)
Nutritional yeast (for cheesy flavor)
Instructions
1. Prep the potatoes
Wash and scrub potatoes thoroughly (leave skin on for crisp texture).
Pat dry completely.
2. Score the potatoes (important step)
Place each potato between two chopsticks or wooden spoons.
Slice thin cuts across the potato (about 2–3 mm apart), but do not cut all the way through.
The chopsticks prevent slicing fully down.
3. Seasoning mix
In a bowl, mix:
Olive oil
Garlic
Salt, pepper
Paprika
Oregano
4. Coat the potatoes
Gently brush or spoon the mixture over each potato.
Make sure oil gets into the cuts by gently fanning them open.
5. Bake
Preheat oven to 200°C (400°F).
Place potatoes on a lined baking sheet.
Roast for 45–55 minutes, flipping once halfway.
Baste with extra oil halfway for maximum crispiness.
6. Finish & serve
Once golden and crispy on edges, remove from oven.
Sprinkle parsley, chili flakes, and lemon juice if using.
Serve hot
Frequently Asked Questions
Can I use sweet potatoes?
Yes, but reduce cooking time slightly (around 35–45 minutes) as they soften faster.
Why aren’t my potatoes crispy?
Possible reasons:
Too much moisture before baking
Overcrowded tray
Not enough oil in the cuts
Can I make them ahead of time?
Yes. Par-bake for 30 minutes, then finish roasting before serving.
Do I need to peel the potatoes?
No—skin helps crisp texture and adds flavor.
Can I air fry instead?
Yes, cook at 190°C (375°F) for about 25–30 minutes, depending on size.
