- 2 tbsp fresh parsley, chopped

Instructions
1. Boil Potatoes
- Place potatoes in salted water
- Boil for 15–20 minutes until fork-tender
- Drain and let cool slightly
2. Smash
- Place potatoes on a lined baking tray
- Use a glass or fork to gently smash each potato
3. Season

4. Bake
