Cheesy Garlic Green Beans
A Mediterranean-inspired dish featuring tender green beans sautéed with garlic, olive oil, and a sprinkle of Parmesan or feta cheese. This flavorful side dish combines fresh ingredients with a touch of indulgence, making it perfect for any meal.
Ingredients:
1 lb (450 g) fresh green beans, trimmed
2 tbsp extra virgin olive oil
3–4 cloves garlic, minced
¼ tsp red pepper flakes (optional)
¼ cup grated Parmesan cheese or crumbled feta cheese (for a Mediterranean twist)
Salt and freshly cracked black pepper, to taste
Zest of 1 lemon (optional for brightness)
Instructions:
Prep the green beans: Wash and trim the ends of the green beans. Blanch in boiling salted water for 2–3 minutes, then immediately transfer to an ice bath to stop the cooking. Drain and pat dry.
Cook the garlic: Heat olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes (if using). Sauté for 1–2 minutes, being careful not to burn the garlic.
Saute the green beans: Add the blanched green beans to the skillet. Toss to coat in the garlic oil and cook for about 4–5 minutes until tender and slightly caramelized.
Add the cheese: Remove from heat and sprinkle with Parmesan or feta cheese. Toss gently to combine.
Finish: Season with salt, pepper, and lemon zest (if using). Serve warm.
Notes:
Cheese options: Parmesan is classic, but feta adds a Mediterranean flair. Choose based on your preference.
Vegan adaptation: Replace cheese with nutritional yeast for a cheesy flavor.
Make-ahead tips: Blanch the green beans in advance and store them in the refrigerator until ready to sauté.
Serving suggestions: Pair with grilled chicken, fish, or a grain like quinoa or farro for a complete Mediterranean meal.
Add-ins: Cherry tomatoes, olives, or toasted almonds can add texture and flavor.
