Chicken Alfredo Stuffed Spaghetti Squash

I can’t believe how quick and easy this is to make! Every bit used and so simple to scrape out.

Ingredients:

  1.  1 large spaghetti squash
  2.  2 cups cooked chicken, shredded (rotisserie chicken works great)
  3. 1 cup Alfredo sauce (store-bought or homemade)
  4.  1 cup shredded mozzarella cheese
  5. 1/2 cup grated Parmesan cheese
  6.  1 teaspoon garlic powder
  7. 1 teaspoon Italian seasoning
  8.  Salt and pepper to taste
  9. Fresh parsley for garnish (optional)

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Halve the spaghetti squash lengthwise and remove the seeds.
3. Position the squash halves cut-side down on a baking sheet and bake for 30-40 minutes until the flesh is tender and easily shredded.
4. In a bowl, mix shredded chicken, Alfredo sauce, garlic powder, Italian seasoning, salt, and pepper until well combined.
5. Add half of the mozzarella cheese and half of the Parmesan cheese to the mixture and stir.
6. After baking, carefully turn the squash halves over and use a fork to scrape the flesh into 7. strands, keeping some intact for the filling.
7. Fill each squash half with the chicken Alfredo mixture.
8. Distribute the remaining mozzarella and Parmesan cheese on top of the stuffed squash.
9. Place the stuffed squash back in the oven and bake for another 15-20 minutes until the cheese is melted and bubbly.
10. Take out of the oven and allow to cool slightly.
11. Optionally, garnish with fresh parsley before serving warm. Enjoy!
