Chicken Teriyaki Fried Rice
Chicken Teriyaki Fried Rice is a delicious and hearty fusion dish that combines the savory flavors of traditional teriyaki chicken with the comforting texture of fried rice. Tender pieces of chicken are marinated in a sweet and salty teriyaki sauce, stir-fried with a mix of vegetables like carrots, peas, and onions, and tossed with fluffy rice to absorb all the flavors. It’s a perfect balance of protein, veggies, and carbs, and it can be customized to personal tastes by adding extra ingredients like eggs, mushrooms, or bell peppers.
Ingredients:
3 cups cooked and chilled Brown Minute Rice
1 cup diced carrots (small)
1/4 medium yellow onion (chopped small)
2 tablespoons minced garlic
3/4 cup broccoli florets (chopped small)
1/2 red bell pepper (chopped small)
1/2 orange bell pepper (chopped small)
1/4 cup petite sweet peas
3/4 cup corn
1/2 cup pineapple (diced)
1 tablespoon olive oil
1 cup Teriyaki sauce with pineapple juice
1 to 1.5 pounds chicken (cut into small pieces)
Instructions:
Prepare the Chicken:
In a large skillet or wok, heat the olive oil over medium-high heat. Add the diced chicken and cook until browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Saute Vegetables:
In the same skillet, add the chopped onion and minced garlic. Sauté for about 2 minutes until fragrant.
Add the diced carrots, broccoli florets, red and orange bell peppers, petite sweet peas, and corn. Cook for another 5-7 minutes, stirring frequently, until the vegetables are tender but still crisp.
Add Rice and Chicken:
Stir in the cooked and chilled brown rice, breaking up any clumps. Add the cooked chicken back into the skillet.
Add Teriyaki Sauce:
Pour the Teriyaki sauce with pineapple juice over the rice mixture. Stir well to combine and heat everything through, about 3-5 minutes.
Add Pineapple:
Gently fold in the diced pineapple and cook for an additional minute to warm through.
Serve:
Remove from heat and serve immediately. Enjoy your flavorful Chicken Teriyaki Fried Rice!
Notes:
Rice Texture: Using day-old rice helps to avoid soggy fried rice. Freshly cooked rice can result in a mushy texture.
Teriyaki Sauce: You can either use store-bought teriyaki sauce or make your own by combining soy sauce, mirin, sake, and sugar. Adjust sweetness and saltiness to taste.
Additions/Substitutions: Feel free to add vegetables like bell peppers, mushrooms, or broccoli for extra nutrition. You can also swap chicken for tofu or shrimp for a different protein.
Cooking Tip: Stir-fry on high heat to get a nice caramelization on the chicken and crispy bits of rice.
This dish makes for a quick and satisfying meal, perfect for a weeknight dinner or meal prep!
