1 tsp salt (adjust to taste)

Juice of ½ lemon (for brightness)

For Garnish:

Extra basil leaves

A drizzle of olive oil or cream

Croutons or toasted nuts for crunch

Instructions

1. Saute the Aromatics

Heat olive oil or butter in a pot over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the garlic and cook for another minute until fragrant.

2. Cook the Base

Add the diced potato, salt, and black pepper, then pour in the broth. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes until the potato is soft.
