Ingredients
For the Soup:
2 cups fresh basil leaves, packed
1 medium onion, chopped
2 cloves garlic, minced
2 tbsp olive oil or butter
3 cups vegetable or chicken broth
1 medium potato, peeled and diced (for creaminess)
½ cup heavy cream or coconut milk (for a dairy-free option)
1 tsp salt (adjust to taste)
½ tsp black pepper
½ tsp red pepper flakes (optional, for spice)
Juice of ½ lemon (for brightness)
For Garnish:
Extra basil leaves
A drizzle of olive oil or cream
Croutons or toasted nuts for crunch
Instructions
1. Saute the Aromatics
Heat olive oil or butter in a pot over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the garlic and cook for another minute until fragrant.
2. Cook the Base
Add the diced potato, salt, and black pepper, then pour in the broth. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes until the potato is soft.
3. Blend the Soup
Turn off the heat and add the fresh basil leaves. Use an immersion blender or transfer to a regular blender to puree until smooth.
4. Add the Cream and Lemon Juice
Stir in the heavy cream (or coconut milk) and lemon juice. Taste and adjust seasoning if needed.
5. Serve and Garnish
Ladle into bowls and garnish with extra basil, a drizzle of olive oil, and croutons or nuts for texture.
