These Crispy Baked Artichokes are a delicious, crunchy appetizer or side dish, perfect for dipping in aioli or a lemony yogurt sauce. Tender on the inside and golden-brown on the outside, these artichokes are lightly breaded, baked (not fried), and packed with flavor. They make a great snack or party dish!
Ingredients
For the Artichokes:
1 (14 oz) can artichoke hearts, drained and patted dry
¼ cup all-purpose flour (or almond flour for a low-carb option)
1 large egg, beaten
½ cup panko breadcrumbs (or regular breadcrumbs)
¼ cup grated Parmesan cheese
½ tsp garlic powder
½ tsp onion powder
½ tsp Italian seasoning (or dried oregano)
¼ tsp salt
¼ tsp black pepper
2 tbsp olive oil (for brushing or spraying)
For Dipping Sauce (Optional):
¼ cup Greek yogurt or mayonnaise
1 tbsp lemon juice
1 tsp Dijon mustard
1 clove garlic, minced
1 tbsp fresh parsley, chopped
Instructions
1. Prep the Artichokes:
Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly grease it.
Cut the artichoke hearts in half or quarters, depending on size.
2. Set Up Breading Station:
Place flour in a shallow dish.
Beat egg in a second dish.
In a third dish, mix panko breadcrumbs, Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper.
3. Coat the Artichokes:
Dredge each artichoke piece in flour, shaking off excess.
Dip in egg, then coat in the breadcrumb mixture, pressing lightly to adhere
Place coated artichokes on the prepared baking sheet.
4. Bake Until Crispy:
Lightly spray or brush the artichokes with olive oil.
Bake for 18-22 minutes, flipping halfway, until golden brown and crispy.
5. Make the Dipping Sauce:
In a small bowl, whisk together Greek yogurt, lemon juice, Dijon mustard, garlic, and parsley.
6. Serve & Enjoy:
Serve warm with the dipping sauce or a squeeze of fresh lemon juice.
