For the crispy roasted cauliflower

1 medium cauliflower, cut into florets

3 tbsp olive oil

1 tsp ground cumin

1 tsp sweet paprika

1 can (400 g) chickpeas, drained and rinsed

2 tbsp tahini

2 tbsp olive oil

Juice of 1 lemon

1 small garlic clove

3–5 tbsp cold water

Salt to taste

Instructions

Preheat oven
Preheat oven to 220°C (425°F). Line a baking tray with parchment paper.

Season cauliflower
Toss cauliflower florets with olive oil, cumin, paprika, garlic powder, salt, and pepper until well coated.

Spread cauliflower in a single layer. Roast for 30–35 minutes, flipping halfway, until deeply golden and crispy at edges.

Prepare hummus
In a food processor, combine chickpeas, tahini, olive oil, lemon juice, garlic, salt, and cold water. Blend until smooth and creamy. Adjust seasoning and consistency.

Assemble dish
