Fajita Chicken Casserole
Perfect for a hearty meal!
Ingredients:
* 2 cups cooked chicken, shredded or dice
* 1 bell pepper (any color), sliced
* 1 onion, sliced
* 1 can (14.5 oz) diced tomatoes, drained
* 1 cup shredded cheese (cheddar or Mexican blend)
* 1 cup sour cream
* 1 tablespoon olive oil
* 2 teaspoons fajita seasoning (store-bought or homemade)
* Salt and pepper to taste
* Fresh cilantro for garnish (optional)
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a skillet, heat the olive oil over medium heat.
3. Add the sliced bell pepper and onion.
4. Sauté until they are softened, about 5-7 minutes.
5. Season with salt, pepper, and fajita seasoning.
6. In a large mixing bowl, combine the cooked chicken, sautéed vegetables, drained diced tomatoes, and sour cream.
7. Mix well until everything is evenly coated.
8. Transfer the mixture into a greased casserole dish.
9. Spread it out evenly.
10. Top with shredded cheese.
11. Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted and bubbly.
12. Once done, remove from the oven and let it cool for a few minutes.
13. Garnish with fresh cilantro if desired.
14. Serve hot.
