French Onion Beef & Rice Muffin Cups
Ingredients:
For the Beef Mixture:
1 lb ground beef
1 small onion, diced
1 packet French onion soup mix
2 tbsp soy sauce
1 tbsp Worcestershire sauce
1 tsp garlic powder
1/2 tsp black pepper
1/2 tsp salt (optional, as the soup mix already has salt)
For the Rice Mixture:
2 cups cooked rice (white or brown)
1 egg, beaten
1 cup shredded cheese (cheddar, mozzarella, or a mix)
1 tbsp fresh parsley, chopped (optional)
1/2 tsp dried thyme (optional)
For Topping:
Extra shredded cheese (for topping)
Fresh parsley (optional, for garnish)
Instructions:
Preheat Oven:
Preheat your oven to 375°F (190°C). Grease or line a muffin tin with paper liners.
Prepare the Beef Mixture:
In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and fully cooked (about 5-7 minutes).
Drain any excess fat from the beef.
Stir in the French onion soup mix, soy sauce, Worcestershire sauce, garlic powder, salt, and pepper. Let it simmer for 3-5 minutes, mixing well, until all flavors are combined. Set aside to cool slightly.
Prepare the Rice Mixture:
In a large bowl, combine the cooked rice, beaten egg, shredded cheese, parsley (if using), and thyme (if using). Stir until everything is well mixed.
Assemble Muffin Cups:
Spoon about 2 tablespoons of the rice mixture into each muffin cup and press it down gently.
Add about 1-2 tablespoons of the beef mixture on top of the rice in each muffin cup.
Sprinkle some extra shredded cheese on top of the beef mixture.
Bake:
Bake the muffin cups in the preheated oven for 15-18 minutes, or until the tops are golden and the cheese is melted and bubbly.
Serve:
Let the muffin cups cool for a few minutes before serving.
Optionally, garnish with fresh parsley for a touch of color and extra flavor.
