Ingredients:
For the Rice Layer:

1 1/2 cups cooked sushi rice or short-grain rice

1 tablespoon olive oil

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder

Salt and pepper to taste

For the Fillings:

1/2 cup crumbled feta cheese

1/2 cup diced cucumber

1/2 cup diced tomato (seeds removed)

1/4 cup sliced Kalamata olives

1/4 cup chopped red onion

1/4 cup chopped fresh parsley

For Assembly:

Large lettuce leaves (such as romaine or butter lettuce) or nori sheets

Tzatziki sauce (for dipping or drizzling)

Directions:

Prepare the Rice:

In a bowl, mix the cooked sushi rice with olive oil, dried oregano, garlic powder, salt, and pepper. Let the rice cool to room temperature.

Prepare the Fillings

:Combine the feta cheese, cucumber, tomato, olives, red onion, and parsley in a mixing bowl. Toss gently to combine.

Assemble the Greek Sushi:

Place a lettuce leaf or nori sheet on a clean surface. Spread a thin, even layer of the seasoned rice over it, leaving about 1 inch at the edges for sealing.

Add a line of the prepared filling across the center of the rice.

Roll the Sushi

Carefully roll the lettuce or nori sheet tightly around the fillings, using gentle pressure to hold the roll together. If using nori, lightly wet the edge to seal the roll.

Repeat with the remaining ingredients.

Slice and Serve:

Using a sharp knife, slice the rolls into bite-sized pieces. Arrange on a serving plate and drizzle with tzatziki sauce or serve it on the side for dipping.

Pro Tips:

Add grilled chicken, shrimp, or falafel for a protein-packed variation.
Substitute quinoa for rice for a lighter option.
