Beef Skewers

Ingredients:

  • 1 lb (450g) beef sirloin or ribeye, cut into 1.5-inch cubes

  • 1 red onion, cut into chunks

  • 1 red bell pepper, cut into chunks

  • 1 zucchini, sliced thick

  • Wooden or metal skewers

Beef Marinade:

  • 2 tbsp olive oil

  • 2 tbsp soy sauce

  • 1 tbsp balsamic vinegar

  • 2 cloves garlic, minced

  • 1 tsp Dijon mustard

  • 1 tsp dried rosemary or thyme

  • Salt and black pepper to taste

Shrimp Skewers

Ingredients:

  • 1 lb (450g) large shrimp, peeled and deveined

  • 1 lemon, cut into wedges

  • 1 zucchini or yellow squash, sliced

  • Cherry tomatoes

  • Skewers (preferably metal or soaked wood)

Shrimp Marinade:

  • 3 tbsp olive oil

  • Zest and juice of 1 lemon

  • 2 garlic cloves, minced

  • 1 tsp paprika

  • 1 tsp dried oregano or parsley

  • Salt and pepper to taste

Ingredients:

  • 1 red onion, cut into wedges

  • 1 bell pepper (any color), cut into squares

  • 1 zucchini, sliced

  • 1 cup mushrooms (whole or halved)

  • Cherry tomatoes

Instructions:

1. Marinate the Ingredients

  • In separate bowls, toss beef, shrimp, and vegetables with their respective marinades.

  • Let beef and vegetables marinate for at least 30 minutes (up to 4 hours for beef). Shrimp only needs 15–30 minutes.

2. Assemble the Skewers

  • Alternate beef and veggies on beef skewers.

  • Thread shrimp, lemon wedges, and veggies onto shrimp skewers.

  • Mix and match vegetables on separate skewers if desired.

3. Grill the Skewers

Preheat grill to medium-high (around 400°F / 200°C).

Oil the grates lightly.

  • Grill times:

Beef skewers: 10–12 minutes, turning every 2–3 mins for medium doneness.

Shrimp skewers: 4–6 minutes, turning once, until opaque and pink.

Vegetable skewers: 10 minutes, turning occasionally until charred and tender.

4. Serve

Remove from heat, let rest briefly, and serve warm.

Great with rice, couscous, pita, or grilled bread and sauces like chimichurri, tzatziki, or garlic yogurt dip.

Tips:

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
