These can be used as a light meal, a side dish, or a wholesome snack. To top it off, serve with a dollop of sour cream or yogurt. Let’s get cooking!

Ingredients:

    • 1 large cauliflower head, broken into florets
    • ½ cup all-purpose flour (or substitute with whole wheat or gluten-free flour)
    • 2 large eggs
    • 3 cloves garlic, minced
    • 3 tablespoons minced scallions
    • Olive oil, for frying
    • Sour cream or yogurt, for servin

Guidelines:

  1. Cook the Cauliflower: Place the cauliflower florets in a large saucepan of boiling water. Cook the cauliflower for 6 to 8 minutes, or until it’s soft but not mushy. After draining, let the cauliflower cool a little.
  2. crush the Cauliflower: After the cauliflower has cooled down enough to handle, put it in a big mixing basin and crush it coarsely using a fork or potato masher. Don’t make it too smooth—you want some texture.
  3. To make the Fritter Batter, mash the cauliflower and add the eggs, flour, minced garlic, and minced scallions. Combine all ingredients until a dense, gooey batter is formed.
  4. Heat a sizable pan over medium heat and add a couple teaspoons of olive oil to form the fritters. Approximately 2-3 teaspoons of the cauliflower batter should be added to the heated oil and gently flattened with the back of a spoon to create little fritters. Don’t crowd the pan as you proceed with the leftover batter.
  5. Cook the Fritters: Fry the fritters for 3–4 minutes on each side, or until the outsides are crispy and golden brown. After frying, transfer the fritters to a platter covered with paper towels so that any extra oil may be absorbed. Till all of the fritters are fried, keep going with the procedure.
  6. Serve: Present the hot cauliflower fritters beside a serving of yogurt or sour cream for dipping. For more taste and freshness, you may also top them with additional onions.
