- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
- 8 ounces pasta (penne, rotini, or fusilli)
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup packed baby spinach
- 1/2 cup grated Feta cheese
Instructions:
Cook the Chicken: Heat olive oil in a large pot over medium-high heat. Add chicken, garlic powder, oregano, red pepper flakes, salt, and pepper. Cook until browned and cooked through. Remove from the pot and set aside.
Sauté the Sun-Dried Tomatoes: In the same pot, add the sun-dried tomatoes and sauté for a few minutes until fragrant.
Add Pasta and Broth: Add the pasta and chicken broth to the pot. Bring to a boil, then reduce heat and simmer, covered, for 10-12 minutes, or until the pasta is al dente.
Create the Sauce: Stir in the heavy cream, spinach, and Feta cheese. Cook for a few more minutes until the spinach is wilted and the sauce is thickened.
Combine and Serve: Add the cooked chicken back to the pot and stir to combine. Serve immediately.
Enjoy your delicious and creamy one-pot pasta!
Tip: For a vegetarian version, omit the chicken and add extra vegetables like mushrooms or zucchini.
