Ingredients:
4 cod fillets
1/4 cup all-purpose flour (almond or chickpea)
Salt and pepper to taste
2 tablespoons olive oil
2 garlic cloves, minced
1 onion, finely chopped
1 cup cherry tomatoes, halved
1/2 cup white wine
1/4 cup fresh basil, chopped
Juice of 1 lemon
INSTRUCTIONS:
Season the cod fillets with salt and pepper, then dust lightly with flour.
Heat olive oil in a skillet over medium-high heat. Add the cod and sear until golden, about 4 minutes per side. Remove from skillet and set aside.
In the same skillet, add garlic and onion. Sauté until onion is translucent.
Add cherry tomatoes and cook until they start to break down.
Deglaze the pan with white wine, scraping up any bits from the bottom of the skillet.
Reduce heat and simmer until the sauce has thickened slightly, about 5 minutes.
Return the cod to the skillet. Sprinkle with fresh basil and drizzle with lemon juice. Cook for another 2-3 minutes, or until the cod is cooked through.
