 Shrimp Scampi Pasta Recipe

Shrimp Scampi Pasta is a classic Italian-American dish featuring succulent shrimp cooked in a garlic, butter, and white wine sauce, then tossed with pasta. It’s a quick and elegant meal perfect for a weeknight dinner or a special occasion.

INGREDIENTS:

1 lb (450g) large shrimp, peeled and deveined

8 oz (225g) linguine or spaghetti

3 tbsp unsalted butter

2 tbsp olive oil

4 cloves garlic, minced

1/2 cup dry white wine

1/4 cup freshly squeezed lemon juice

1/4 cup chicken broth (optional)

1/4 tsp red pepper flakes (optional)

Salt and freshly ground black pepper to taste

1/4 cup fresh parsley, chopped

Lemon zest, for garnish (optional)

Grated Parmesan cheese, for serving (optional)

 INSTRUCTIONS:

1. Cook the Pasta:

– In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Drain and set aside.

2. Prepare the Shrimp:

– Pat the shrimp dry with paper towels and season with salt and pepper.

3. Cook the Shrimp:

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat.

Add the shrimp and cook for 1-2 minutes on each side, until pink and opaque. Remove shrimp from the skillet and set aside.

4. Make the Sauce:

In the same skillet, add the remaining butter and olive oil. Add the minced garlic and cook for about 1 minute, until fragrant.

Pour in the white wine and lemon juice, and chicken broth if using. Add red pepper flakes, if desired. Simmer for 2-3 minutes until the sauce reduces slightly.

5. Combine Pasta and Shrimp:

– Return the shrimp to the skillet, add the cooked pasta, and toss everything together until well coated. Cook for another 1-2 minutes to warm everything through.

6. Serve:

Remove from heat and stir in the chopped parsley. Adjust seasoning with salt and pepper as needed.

Garnish with lemon zest and grated Parmesan cheese if desired.

Storage Tips:

Refrigeration: Store leftovers in an airtight container in the refrigerator for up to 2 days.

Reheating: Reheat gently in a skillet over medium heat with a splash of chicken broth or water to prevent drying out.

Freezing: It is not recommended to freeze this dish as the texture of the shrimp and pasta can change upon thawing.
