Ingredients
For the Chicken:
2 cups cooked, shredded chicken (rotisserie or grilled)
1 tbsp olive oil
1 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chicken broth or water (to keep it juicy)
For the Nachos:
1 bag (10-12 oz) tortilla chips
2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
1/2 cup black beans, drained and rinsed
1/2 cup corn (optional)
1/4 cup sliced jalapenos (optional)
For Toppings:
1/2 cup diced tomatoes
1/4 cup chopped red onion
1/4 cup chopped cilantro
1/2 cup sour cream or Greek yogurt
1 avocado, diced or mashed
1 lime, cut into wedges
Instructions
1. Prepare the Chicken:
Heat olive oil in a skillet over medium heat.Add shredded chicken, chili powder, cumin, paprika, garlic powder, salt, and black pepper.Stir in chicken broth and cook for 3-4 minutes, until heated through. Remove from heat.
2. Assemble the Nachos:
Preheat oven to 375°F (190°C) (if finishing in the oven).
In an oven-safe skillet (like cast iron), spread a layer of tortilla chips.Top with half the cheese, shredded chicken, black beans, corn, and jalapenos.
Add another layer of chips, remaining cheese, and toppings.
3. Cook the Nachos:
Option 1: Stovetop – Cover the skillet with a lid and cook over low heat for 5-7 minutes until cheese melts.
Option 2: Oven – Bake at 375°F for 10 minutes until cheese is bubbly.
4. Add Fresh Toppings & Serve:
Remove from heat and sprinkle with diced tomatoes, red onion, and cilantro.
