Spinach Ricotta Bites

Spinach Ricotta Bites

Spinach Ricotta Bites are a delightful combination of creamy ricotta cheese, tender spinach, and savory seasonings, baked into small, golden bites. These are perfect as appetizers, snacks, or a light meal. The blend of cheesy richness and earthy spinach makes them a nutritious and flavorful treat.

Ingredients:

2 tablespoons Olive oil

1 small yellow onion, chopped

1 clove garlic, minced

2 large eggs, beaten

1 cup ricotta cheese (low-fat or full-fat ricotta works)

1/2 cup mozzarella cheese, shredded

1/2 cup parmesan cheese, grated

10-ounce package frozen chopped spinach, defrosted and drained well (squeeze out as much liquid as possible)

1/4 teaspoon kosher salt

Instructions:

Preheat the oven:

Preheat your oven to 375°F (190°C). Grease or line a mini muffin tin.

Sauté the onion and garlic:

Add olive oil in a small skillet over medium heat. Add the chopped onion and saute until soft, about 4-5 minutes. Add the minced garlic and cook for another minute until fragrant. Remove from heat and let cool slightly.

Mix the ingredients:

In a large bowl, combine the beaten eggs, ricotta cheese, mozzarella, parmesan, and salt.

Add the well-drained spinach and the sautéed onion and garlic mixture. Mix everything until fully combined.

Scoop into the muffin tin:

Spoon the mixture into the prepared mini muffin tin, filling each cup nearly to the top.

Bake:

Bake in the preheated oven for 20-25 minutes, or until the bites are set and slightly golden on top.

Cool and serve:

Allow the spinach ricotta bites to cool for a few minutes before removing them from the tin. Serve warm.

Notes:

Use fresh or frozen spinach; ensure it’s well-drained to avoid sogginess.

Ricotta should be full-fat for a creamy texture, but low-fat can be used for a lighter option.

Customize the seasoning with garlic powder, nutmeg, or red pepper flakes for extra flavor.

Can be made ahead of time and reheated for convenience.

Tips:

Binding: If the mixture feels too wet, add breadcrumbs or almond flour to bind.

Shaping: Use a mini muffin tin or roll into small balls for consistent shapes.

Serving: Pair with marinara sauce, pesto, or a tangy yogurt dip for dipping.

Storage: Store leftovers in an airtight container in the fridge for up to 3 days or freeze for longer storage. Reheat in the oven to maintain crispness.

These Spinach Ricotta Bites make for a delicious appetizer or snack. Enjoy!
