Ingredients:
  1. 2 medium zucchinis
  2.  1 cup shredded mozzarella cheese
  3.  1/2 cup grated Parmesan cheese
  4.  2 large eggs
  5.  1/2 cup all-purpose flour (or almond flour for a low-carb option)
  6. 1 teaspoon garlic powder
  7. 1 teaspoon onion powder
  8. 1 teaspoon dried oregano
  9. Salt and pepper to taste
  10. Olive oil spray (for greasing)
Instructions:
1. Preheat the Oven:
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Prepare the Zucchini:
Grate the zucchinis using a box grater or food processor. Once grated, place the zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial to prevent the mixture from being too watery.
3. Mix Ingredients:
In a large bowl, combine the grated zucchini, shredded mozzarella cheese, grated Parmesan cheese, eggs, flour, garlic powder, onion powder, oregano, salt, and pepper. Mix everything together until well combined.
4. Form the Clouds:
Using a spoon or your hands, scoop out portions of the mixture and shape them into small mounds (about the size of a golf ball) on the prepared baking sheet. Flatten them slightly to form patties.
5. Bake:
Lightly spray the tops of the zucchini clouds with olive oil. Bake in the preheated oven for about 20-25 minutes, or until they are golden brown and cooked through.
6. Cool and Serve:
Once baked, remove them from the oven and let them cool slightly before serving. They can be enjoyed warm or at room temperature.
