This 20-Minute Healthy Sausage and Veggies One-Pot recipe features savory sausage, colorful veggies, and seasonings, all cooked together in one pan for a quick, nutritious meal!
Ingredients:
- 12 oz smoked chicken sausage, sliced into rounds
- 1 tablespoon olive oil
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, sliced into half-mons
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
- 2 cups baby potatoes, rinsed and quartered
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese (optional, for garnish)
Instructions:
1. Heat olive oil in a large skillet over medium-high heat.
2. Add the sausage slices and cook for 2-3 minutes per side, until browned.
3. Remove and set aside.
4. In the same skillet, add the onion, bell peppers, zucchini, and potato.
5. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender but still crisp.
6. Add the garlic, Italian seasoning, smoked paprika, and red pepper flakes.
7. Stir and cook for another 1-2 minutes.
8. Return the sausage to the skillet and toss to combine.
9. Adjust seasoning with salt and black pepper.
10. Transfer to a serving dish, sprinkle with Parmesan cheese and fresh parsley if desired, and serve immediately.
