  3.  1 red bell pepper, chopped
  4.  1 yellow bell pepper, chopped
  5.  1 zucchini, sliced into half-mons
  6.  2 cloves garlic, minced
  7.  1 teaspoon Italian seasoning
  8.  1/2 teaspoon smoked paprika
  9.  Salt and black pepper, to taste
  10.  Fresh parsley, chopped, for garnish
  11.  2 cups baby potatoes, rinsed and quartered
  12.  1/2 teaspoon red pepper flakes (optional)
  13.  1/4 cup grated Parmesan cheese (optional, for garnish)

Instructions:
