Grilled Peach Salad with Tomato and Feta
Grilled Peach Salad with Tomato and Feta combines sweet grilled peaches, fresh tomatoes, and savory Parmesan, tossed in a light vinaigrette for a refreshing, vibrant dish!

Ingredients:
* 4 ripe peaches, halved and pitted
* 2 tablespoons olive oil, plus extra for grilling
* 1 shallot, chopped
* 2 cups cherry or heirloom tomatoes, halved
* 1/3 cup shaved Feta cheese
* 1/4 cup fresh mint leaves, torn
* 1/4 cup fresh dill, chopped
* 1 pinch cinnamon
* 1 teaspoon cracked black pepper
* 1/4 cup balsamic glaze
* Salt, to taste

Instructions:
1. Preheat a grill or grill pan to medium heat.
2. Brush the peach halves with a bit of olive oil.
3. Place the peach halves cut-side down on the grill.
4. Cook for 2-3 minutes, or until grill marks appear.
5. Flip and grill for another 2 minutes on the other side.
6. Remove from the grill and let cool slightly.
7. Slice into wedges.
