Ingredients
250 g pasta (spaghetti, penne, or fusilli)
2 tbsp olive oil
3 cloves garlic, minced
2 zucchini, sliced into half-moons
1 cup cherry tomatoes, halved
½ tsp salt
¼ tsp black pepper
½ tsp red chili flakes (optional)
2 tbsp fresh basil or parsley, chopped
¼ cup Parmesan cheese, grated (optional)
Instructions
1️⃣ Cook the Pasta
Bring a pot of salted water to a boil.
Cook pasta according to package instructions. Drain and reserve ½ cup pasta water.
2️⃣ Sauté the Garlic
Heat olive oil in a large skillet over medium heat.
Add minced garlic and cook for 30 seconds until fragrant.
3️⃣ Cook the Vegetables
Add zucchini slices and sauté for 4–5 minutes until slightly tender.
Stir in cherry tomatoes and cook for another 2–3 minutes.
4️⃣ Combine with Pasta
Add cooked pasta to the skillet. Toss everything together, adding a little reserved pasta water if needed for a light sauce.
5️⃣ Finish and Serve
Season with salt, pepper, chili flakes, and fresh herbs.
Top with Parmesan cheese if desired and serve warm.
