Baked Sweet and Sour Chicken

Ingredients:
- 1 lb chicken breast, cubed
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1/4 cup vegetable oil
- Salt and pepper to taste
For the Sweet and Sour Sauce:
- 1/2 cup sugar
- 1/4 cup ketchup
- 1/4 cup white vinegar
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1/2 cup pineapple chunks (optional)
Instructions:
- Preheat oven to 325°F (165°C). Season chicken with salt and pepper, coat with cornstarch, and dip in beaten eggs.
- Heat oil in a pan and lightly brown the chicken on all sides, then transfer to a baking dish.
- Mix sugar, ketchup, vinegar, soy sauce, and garlic powder to make the sweet and sour sauce. Pour over the chicken.
- Bake for 50-60 minutes, stirring halfway through to coat the chicken in the sauce.
- Add pineapple chunks in the last 10 minutes of baking, if using.
