Ingredients:

  1. 1 lb chicken breast, cubed
  2. 1/2 cup cornstarch
  3. 2 eggs, beaten
  4. 1/4 cup vegetable oil
  5. Salt and pepper to taste

For the Sweet and Sour Sauce:

  1. 1/2 cup sugar
  2. 1/4 cup ketchup
  3. 1/4 cup white vinegar
  4. 1 tablespoon soy sauce
  5. 1 teaspoon garlic powder
  6. 1/2 cup pineapple chunks (optional)

Instructions:

  1. Preheat oven to 325°F (165°C). Season chicken with salt and pepper, coat with cornstarch, and dip in beaten eggs.
  2. Heat oil in a pan and lightly brown the chicken on all sides, then transfer to a baking dish.
  3. Mix sugar, ketchup, vinegar, soy sauce, and garlic powder to make the sweet and sour sauce. Pour over the chicken.
  4. Bake for 50-60 minutes, stirring halfway through to coat the chicken in the sauce.
  5. Add pineapple chunks in the last 10 minutes of baking, if using.
