Creamy Garlic Chicken with Spinach and Peppers Recipe

When it comes to deciding what to make for dinner, I’m always up for a delicious chicken dish. Tonight, I’m making garlic chicken, and trust me, it’s so tasty!

Cook Time: 30 minutes

Servings: 3

Ingredients:

3 chicken breasts

2 tbsp olive oil

Salt and pepper to taste 

1 tsp smoked paprika

2 cloves garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

2 cups fresh spinach

1 cup Low Fat cream (Greek Yogurt)

1/2 cup chicken broth

1/2 tsp chili flakes (optional)

Fresh parsley for garnish

INSTRUCTIONS:

1. Sear the chicken:

Season the chicken breasts with salt, pepper, and smoked paprika. Heat olive oil in a large skillet and sear the chicken on both sides until golden brown. Remove and set aside.

2. Saute the vegetables:

In the same skillet, add garlic and bell peppers. Sauté until the peppers soften.

3. Make the sauce:

Stir in the chicken broth, heavy cream, and chili flakes. Bring to a simmer, then add the spinach, letting it wilt into the sauce.

4. Return the chicken:

Place the chicken back in the skillet, spooning sauce over the top. Let it simmer for another 10 minutes until the chicken is cooked through.

5. Serve:

Garnish with fresh parsley and serve over rice or pasta.
