Drunken Lobster Tail Skewers
Ingredients:
- 4 lobster tails
- – 1/4 cup fresh lemon juice
- – 3 cloves garlic, minced
- – 1 tbsp fresh parsley, chopped
- – 1 tbsp fresh cilantro, chopped
- – 1 tsp paprika
- – 1/2 tsp red pepper flakes (optional)
- – 1/2 tsp salt
- – 1/4 tsp black pepper
- – 2 tbsp olive oil
- – Lemon wedges, for serving
Directions:
Prepare the Lobster Tails:
– Using kitchen shears, cut down the top shell of each lobster tail, stopping at the base.
– Gently pull the lobster meat out of the shell, leaving the end attached, and lay it on top of the shell.
Marinate the Lobster:
– In a large bowl, combine white wine, lemon juice, garlic, parsley, cilantro, paprika, red pepper flakes (if using), salt, black pepper, and olive oil. Mix well.
– Place lobster tails in the bowl, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, up to 2 hours.
Prepare the Skewers:
– Preheat grill to medium-high heat.
– Remove lobster tails from marinade and thread onto skewers. If using wooden skewers, soak in water for 30 minutes before grilling.
Grill the Lobster Tails:
– Place skewers on the preheated grill.
– Grill for 5-7 minutes per side, or until lobster meat is opaque and cooked through, basting occasionally with remaining marinade.
Serve:
– Remove skewers from grill and let rest for a few minutes.
– Serve hot with lemon wedges on the side.
