- 1 cup broccoli florets
- 2 small or 1 large chicken breasts cut into 1-inch cubes
- 1 cup chopped or sliced bell peppers (option of colours).
- One little zucchini, sliced
- Half a cup of tomatoes, cut into large chunks or grape tomatoes
- Half a cup of chopped or sliced onion
- One tablespoon of olive oil
- One tablespoon of Italian spice
- One teaspoon of either freshly minced garlic or garlic powder
- One teaspoon of optional paprika
- To taste, add salt and pepper.
Instructions For Easy Baked Italian Chicken and Veggie Foil Packets
- Set oven temperature to 400F.
- All the ingredients should be combined and thoroughly mixed in a large bowl or ziplock bag.
- Cut two 12 by 12 inch (about) aluminium foil squares, then arrange them on a sheet pan. To create a tight seal, place half of the mixture on each foil sheet and gently fold the foil over the ingredients.
- Bake the chicken for 20 minutes, or until it is thoroughly done. Accompany with noodles or rice on the side.

Combine 1 teaspoon each of dried oregano, marjoram, thyme, and basil; add 1/2 teaspoon each of dry rosemary and sage to produce 1 tablespoon of Italian seasoning.
