Ingredients:
- 4 oz Italian sausage, hot
- 4 oz pancetta
- 24 slices pepperoni
- 1/4 cup banana pepper
- 1/3 cup green bell pepper
- 1/3 cup red bell pepper
- 1/3 cup red onion
- 1/4 cup black olives
- 1 tsp honey
- 1/2 cup pizza sauce, store bought or homemade
- 2 1/4 tsp active dry yeast
- 2 2/3 cup bread flour
- 1 1/2 tsp Italian seasoning
- 1 tsp kosher salt
- 2 tbsp olive oil
- 1 cup fontina, grated
- 2 cups mozzarella cheese, fresh grated
- 2 tbsp parmesan cheese, fresh grated
- 1 cup water
Instructions:
1. In a bowl, mix 1 cup of warm water (about 110°F) with 1 teaspoon honey.
2. Sprinkle the active dry yeast over the water, stir gently, and let it sit for 5-10 minutes until foamy.
3. In a large mixing bowl, combine 2 2/3 cups bread flour and 1 teaspoon kosher salt.
4. Add the activated yeast mixture and mix to form a dough.
5. Knead the dough for about 8-10 minutes until it’s smooth and elastic. (If using a stand mixer, use the dough hook on medium speed.)
6. Add 1 tablespoon olive oil, kneading it into the dough until well incorporated.
7. Place the dough in a greased bowl, cover it with a towel or plastic wrap, and let it rise for about 1 hour, or until it doubles in size.
8. Once the dough has risen, punch it down and transfer it to a greased 12×18-inch baking sheet or a large baking pan.
9. Spread the dough to fill the pan, pressing your fingers into it to create dimples.
10. Drizzle 1 tablespoon olive oil over the top.
11. Let the dough rise in the pan for another 30-45 minutes.
12. In a skillet over medium heat, cook the Italian sausage and pancetta until browned and fully cooked.
13. Drain any excess fat and set aside.
14. Dice the red onion, green and red bell peppers, and banana peppers.
15. Slice the black olives.
16. Set aside with the cooked meats and pepperoni.
17. Preheat your oven to 425°F (220°C).
18. Spread 1/2 cup pizza sauce evenly over the focaccia dough.
19. Sprinkle 2 cups freshly grated mozzarella and 1 cup grated fontina over the sauce.
20. Evenly distribute the cooked Italian sausage, pancetta, and pepperoni slices over the cheese.
21. Add the diced red onion, green and red bell peppers, banana peppers, and sliced black olives on top.
22. Sprinkle 1 1/2 teaspoons Italian seasoning over the pizza for extra flavor.
23. Sprinkle 2 tablespoons freshly grated Parmesan over the toppings.
24. Place the assembled focaccia pizza in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the focaccia crust is golden brown.
25. Allow the pizza to cool for a few minutes, then slice and serve warm.
