Roasted Sausage and Veggie Medley
This recipe creates a flavorful, well-seasoned dish that’s perfect as a side or a main course, full of vibrant veggies and savory sausage!
Ingredients:
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 orange bell pepper, sliced
- 1 zucchini, sliced
- 1 cup broccoli florets
- 1 bunch asparagus, cut into 2-inch pieces
- 1 cup mushrooms, sliced
- 2 sausages (your choice), sliced into rounds
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon Onion & Herb seasoning
- 1 teaspoon Vegetable seasoning
Instructions:
1. Preheat oven to 400°F (200°C).
2. In a large bowl, combine the red, yellow, and orange bell peppers, zucchini, broccoli, asparagus, mushrooms, and sausage.
3. Drizzle the mixture with extra virgin olive oil and toss to coat evenly.
4. Sprinkle garlic powder, chili powder, Mrs. Dash Onion & Herb, and Mrs. Dash Vegetable seasoning over the mixture, then toss again to distribute the seasonings.
5. Arrange the mixture in a single layer on a baking sheet.
6. Bake for 8 minutes, then flip the veggies and sausage.
7. Continue baking for another 8 minutes, or until the veggies are tender but still crisp.
8. Remove from the oven and serve.
